Not sure if this was actually the first (Astrosmash is another contender for me), but it’s what came to mind:
The shield and armour specifically (sadly in this shot Wonder Boy isn’t wearing his pink cloth boots), but the enemy red knight is pretty pink too.
This is tough for me as I don’t really remember stuff in a visual/experiential way. I kinda just remember stuff as like a list of things that happened? Anyway I think it’s gotta be Aeris/th in the intro to FF7.

I must’ve had a few games but I remember playing this the most, there’s a lot of pink in Cinderella’s half
Certainly not the first pink I’ve seen, but maybe the first time I’ve thought to myself: “That’s pretty pink.”
France and Japan respectively play in flamboyant peach and ferocious pink jerseys in Soccer for the NES…
… But more importantly and memorably, there’s a cheerleader show at half-time.
I certainly spent a whole lot of time looking at some CGA graphics in my time, and even that version of Alley Cat in particular, but unfortunately it wasn’t my first signing of video games pink.
(We’ve briefly talked about Alley Cat on these boards somewhere in the past, and I never knew until then that the different ports had different music. The PC speaker squawks of that title tune are locked in my memory forever)
I’m really questioning my definition of pink because I’m seeing some pictures I would definitely classify as purple and not pink.
I agree CGA’s pantone is debatable, for instance, but for many old games originally plugged in on CRT screens, you also have to remember many of them had brighter / washed up colors compared to their native output in emulation.
I played it on a green and black Hercules monitor at PAX Australia a couple of years back. It looked ridiculously sharp on that for a game thats over 40 years old.
